!/4 cup butter
1/4 cup flour
1 tsp salt
1 cup cream
1 cup asparagus juice (from can)
2 tsp pimento juice (from can)
1/4 cup diced pimento
1 1/2 cups canned mushrooms
1/2 cup grated cheese
2 x 12oz cans asparagus, cut and drained
3 egg yolks, lightly beaten
3 egg whites
1/4 tsp prepared mustard
1/2 cup buttered breadcrumbs

Cooking Instructions

Set oven to 350 F.
Make a cream sauce with the first 6 ingredients.
Add the lightly beaten egg yolks and the cheese to the sauce.
Butter a casserole.
Add a layer of asparagus, sprinkle with mushrooms and pimento and cover with a layer of sauce.
Repeat until all the ingredients are used.
Beat the egg whites until stiff and then beat in the mustard.
Spread this over the mixture in the casserole.
Sprnkle with the buttered breadcrumbs.
Bake for 20 minutes.
