Fish Fillets over Lentils and Vegetables: Submitted by: Willow | Date Added: 3 Feb 2011

1 small onion
1 pkg (10oz) grated carrot
1 tsp minced garlic
3 tsp olive oil
1 pkg (10oz) fresh spinach leaves
1/4 cup water
1 can (19oz) lentils, rinsed and drained or 2 cups cooked brown lentils
1 tbsp + 1 tsp Dijon mustard
2 tbsp Balsamic vinegar
4 white fish fillets

Cooking Instructions

In a large saucepan over high heat, saute the onions,carrots and garlic in 2 teaspoons oil for 5 minutes.
Stir in the spinach and water, cover, reduce heat and cook for 5 minutes.
INcrease heatto high, stir in lentils and 1 tablespoon of mustard and heat through.
Stir in salt to taste and 1 tablespoon of vinegar, and keep warm.
Heat the remaining oil in a non stick skillet over medium heat.
Add the fish and cook 3 to 4 minutes until browned.
Reduce heat to medium, turn over fish and cook through.
Serve over lentils.
Mix the remaining vinegar and mustard together and drizzle over the fish.
Serves 4.
