4 onions, finely chopped
1/3 cup chopped Italian pasrley
1/4 cup butter
2 cloves garlic, crushed
1 bay leaf
4 juniper berries
1/2 tsp grated ginger
3/4 cup dry white wine
6 serving pieces monkfish (about 1 1/2 lbs)
1/3 tsp freshly ground pepper
Salt to taste

Cooking Instructions

Melt butter in a large deep frying pan set over medium low heat.
Add onions, garlic, bay leaf and juniper berries.
Cover and cook until soft, stirring occasionally, about 5 minutes.
Stir in ginger and wine and arrange fish on top.
Cover and increase heat to medium.
Cook, turning once, until fish is opaque, about 8 minutes.
Remove fish from sauce, and stir in parsley, salt and pepper.
Serve with linguine, other pasta or rice.
Serves 6.
Sword fish can be substituted for monkfish.
