Sauteed Swordfish: Submitted by: Senga | Date Added: 12 Feb 2011

1 lb swordfish steak
8 pitted large green olives, sliced
8 pitted black olives, sliced
1 clove garlic, crushed
1 tbsp chopped coriander
2 oz lemon juice
2 tbsp minced onion
2 oz melted butter
1 oz oil
Dash of soy sauce
Salt and pepper to taste

Cooking Instructions

Cut fish into 1/2 inch strips.
Heat theoil and butter in a frying pan, add garlic and then onions.
Saute until onions are golden, then add fish and saute a few minutes on each side.
Rinse the olives with water and add to the fish.
Add the rest of ingredients and saute until heated through.
