200g almond meal
400ml milk
1 tsp vanilla or almond essence
2 large egg yolks
2 tsp caster sugar
1 tbsp cornstarch

Cooking Instructions

Preheat oven to 160C.
Put almond meal, milk and essence in a soucepan and simmer over low heat for 10 minutes.
Put egg yolks and sugar in a bowl and beat until the sugar dissolves
Stir in the cornstarch and mix well.
Bring the milk mixture to a boil, stir into egg mixture, stirring constantlyuntil combined.
Pour the mixture into a well buttered or oiled ovenproof dish.
Stand dish in a baking dish with enough warm water to come halfway up the sides of the dish.
Bake for 35 minutesor until tp has browned slightly.
Cool a little before serving or serve cold.
