Apple and Prune Stuffing: Submitted by: Senga | Date Added: 13 Feb 2011

3/4 lb pitted prunes, quarted
1/2 lb dried apples, cut into 1/2 inch pieces
1 cup tawny port
2 large onions, minced
2 stalks celery, sliced thin
1/2 cup butter
1/4 cup minced fresh parsley
1 tsp grated lemon rind
1/2 tsp cinnamon
1/4 tsp ground allspice
Salt and pepper to taste

Cooking Instructions

In a large ceramic or glass bowl toss prunes and apples with port.
Cover and let fruit macerate for 1 hour or overnight.
In a skillet cook onions and celery in butter over moderate heat until onions are translucent.
Cool the mixture.
Mix the fruit into the onion mixture.
Add the rest of the ingredients and stir until combined.
This may prepared the day before and refrigerated until needed.
This stuffing is used for a goose.
