1 cup butter
1/2 cup sugar
1 egg
1 tsp vanilla
2 cups sifted flour
Filling:
2 eggs, well beaten
1/2 cup sugar
1/2 lb finely ground almonds or almond paste
1/4 tsp salt

Cooking Instructions

Cream butter and sugar until light and fluffy.
Add egg and vanilla and continue beating until incorporated.
Add the flour and mix well.
Chill the dough for an hour.
Place about 1 teaspoon in very small muffin pans (about 1 inch wide and 1 inch deep).
Press the batter up the sides and over the bottom.
Combine the ingredients for the filling, mixing well.
Place about 1 teaspoon filling in each cup.
Bake at 350F for 30 minutes.
Makes about 36.
