Latest Recipes1 1/2 cups (300ml) basmati rice
1 tbsp (15ml) oil
1/2 tsp (2ml) crushed garlic
1 tsp (5ml) finely chopped onion
1 whole hot pepper, slit
1 tsp (5ml) salt
2 1/2 cups (625ml) light coconut cream
Clean and wash the rice, and soak in water for 10 to 15 minutes, drain.
In a heavy bottomed pan, heat the oil.
Add the garlic, onion and hot pepper, saute for 1 minute.
Add the coconut cream and bring to a boil.
Stir in the drained rice and salt, add extra water if required to cover rice.
Cook on low heat, partially covered.
Cook until the liquid has dried up, about 20 minutes.
Bake in a preheated oven at 300F (150C) for 20 minutes, covered.
Serves 4 to 6.
