5 lb boned leg of pork
Rub:
Salt, brown sugar and oil
Sauce:
1 pt (2 1/2 cups) prepared tomato soup
1 pt (2 1/2 cups) prepared French onion soup
1 tbsp each soy sauce, soft brown sugar, chili powder, vinegar, Worcestershire sauce, prepared mustard
1 tsp salt, black pepper, cayenne pepper
1 garlic clove, crushed
1 bay leaf

Cooking Instructions

Sauce:
Place all the ingredients for the sauce in a pan and heat to combine.
Make rub by combining the ingredients.
Rub the mixture over the pork.
Cook the pork in a very hot oven for 1/2 hour.
Reduce oven heat to medium.
Add the sauce to the baking tin and cook, basting frequently.
Cook pork for 30 minutes per pound.
When cooked, remove the pork from the sauce and allow to cool.
Thicken the sauce with cornstarch.
Slice the pork when cold.
To serve heat the pork in the sauce.
