2 onions, chopped
1 green pepper, seeded and chopped
2 cloves garlic, crushed
1 celery stalk, chopped
1/4 cup butter or oil
4 cups chopped peeled tomatoes, fresh or canned
1 bay leaf
1 large pinch dried basil
1/4 cup fresh parsley
Salt and pepper
4 zucchini, cut in 1/2 in slices
All purpose flour
1/2 cup oil
1 cup fresh breadcrumbs
1/4 cup grated Parmesan cheese

Cooking Instructions

In a 3 quart saucepan heat the 1/4 cup butter or oil.
Add the onions, green pepper, celery and garlic and cook until the onions are tender.
Add the tomatoes, bay leaf, basil, parsley,salt and pepper to taste and simmer uncovered for 30 minutes.
Shake the zucchini slices in a bag containing some flour.
Shake the slices individually to remove excess flour and brown them in hot oil.
Drain the slices on paper towel on a rack.
Add to the tomato mixture and cook gently for 15 minutes.
Pour the mixture into a shallow au gratin dish .
Sprinkle with combined breadcrumbs and cheese.
Dot with butter and bake in a 400F oven until bubbly. (About 10 minutes)
Serves 8
