2 425g cans pitted black cherries
2/3 cup sugar
1 tbsp lemon juice
1 tbsp kirsch or apple juice
1 tbsp gelatine
600ml whipping cream

Cooking Instructions

Drain cherries, reserving 1/4 cup of syrup.
Blend or process cherries, reserved syrup, sugar, juice and liqueur until smooth.
Transfer the mixture to a bowl.
Sprinkle gelatine over water in a cup and stand cup in apan of simmering water.
Stir until dissolved.
Stir the gelatine mixture into the cherry mixture.
Beat the cream until soft peaks form.
Fold into the cherry mixture.
Pour mixture into 8 glasses, cover and refrigerate until set.
Decorate with extra cream and cherries before serving.
Serves 8
