Honey Citrus Chicken Kabobs: Submitted by: TheCooks | Date Added: 3 Oct 2010

500g boneless chicken breast
50 ml liquid honey
50 ml orange juice
25 ml lemon juice
2 ml each grated orange and lemon rind
2 ml ginger
1 large sweet red or green pepper.

Cooking Instructions

Cut the chicken into 2.5 cm pieces.
Place in a plastic bag in a bowl.
In a microwave safe bowl, combine honey, juices, rinds and ginger.
Microwave on high for 30 seconds or until honey dissolves.
Pour over the chicken and mix to coat.Press air out off the bag and seal.
Refrigerate until ready to cook, up to 12 hours.
Cut the pepper into 2.5 cm pieces.
Drain the chicken and reserve the marinade.
Alternately thread chicken and pepper on to 4 oiled skewers.
Broil the kabobs about 13 cm from heat.
Cook for about 8 minutes or until chicken is tender.
Turn the kabobs once and brush with the reserved marinade.
Serves 4.
This can be cooked on the barbecue.
