60g butter
2 cloves garlic, crushed
750g potatoes peeled
4 leeks, sliced
3/4 cup cream
90g raisins
90g Swiss cheese,grated

Cooking Instructions

Rub the butter and garlic on to a an ovenproof serving dish, set aside.
To parboil the potatoes, place in a large saucepan of boiling water and cook until just tender.
Slice the potatoes and place a layer onthe base of the serving dish.
Arrange a layer of leeks on the potato and repeat this process with the remaining potatoes and leeks.
Pour the cream over the last layer of leeks and sprinkle with the raisins and cheese.
Bake in a180C oven for about 40 minutes or until golden.
Serves 4 as side dish.
