250 g spinach
2 tbsp olive oil
2 tbsp minced garlic
2 tbsp grated ginger
1 large onion, chopped
2 tsp curry powder
2 tsp garam masala
2 bay leaves
400 g tomatoes
400 g can chickpeas, drained
1/2 cup water
1 tsp salt
Black pepper
2 tbsp coriander, chopped

Cooking Instructions

Stir fry the ginger, garlic and onion until the onion has softened.
Add curry powder, garam masala, and bay leaves.
After 1 minute add the spinach and tomatoes (including juice, if canned).
Stir in the chickpeas.
Simmer for 15 minutes, adding water if necessary.
Season with salt and pepper and then add the chopped coriander.
